A Dutch Garden and Roasted Tomato Sauce with Sausage

It is cozily stormy and wintry in my part of Australia today, so it is a perfect time to close my eyes and imagine that I’m back in the warm, lush gardens of the Kroonluchter Atelier De Rode Hoeve outside Amsterdam.

Being the only one in the garden enhanced the sense of utter serenity and stillness I felt as I sat on a rough stone bench by the pond and absentmindedly stroked the soft fur of a kitty who nuzzled my hand and purred loudly.

I smiled at the delightful hodgepodgery of the garden, a modern swing in chrome and black just down the path from a perfectly splendid Scandinavian gate intricately carved and painted a marvelous blue.

I was smitten by the pretty little cottages alight with the glow of dozens of chandeliers hanging inside them.

Wrought iron swans sat gracefully among the reeds while wrought iron geese cavorted in a gently burbling creek.

This was my favorite cottage of all. How I’d love to have one like it in my garden someday, a whimsical blue hideaway perfect for long afternoon naps and cozy afternoons losing myself in a good story.

After such an inspiring day in the fresh air, comfort food is definitely in order. Pasta is always comforting to me, especially with homemade sauce and cheesy garlic bread.

This is one of my favorite sauces, particularly rich and flavorful because I roast the tomatoes with garlic before I puree them and add caramelized onions and savory sausage. Roasting the tomatoes adds time to the cooking process, but it’s absolutely worth it.

I like this dish best with my brother Ryan’s garlic bread: a lovely crusty loaf sliced and spread thickly with a mixture of butter, mayonnaise, grainy mustard, green onion, fresh garlic, and Parmesan cheese. Place slathered bread under the broiler until the topping bubbles and browns. Serve hot.

What is your favorite comfort food on an overcast day?

Roasted Tomato Sauce with Sausage

Ingredients:

20 Roma tomatoes, washed, dried and halved lengthwise
2 Tbsp minced garlic
3 Tbsp extra virgin olive oil
sea salt
freshly ground pepper
1 Tbsp extra virgin olive oil
1 large onion, chopped fine
1 tsp fresh herbs of your choice, chopped fine (rosemary or oregano or basil)
1 pound good quality ground sausage
sea salt and freshly ground pepper to taste

Directions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Line baking sheet with baking paper (tomatoes will stick to aluminum foil).
  3. In large bowl gently stir tomato halves, minced garlic, olive oil, salt and pepper until tomatoes are coated.
  4. Place tomatoes on baking sheet cut side up.
  5. Bake for 45-60 minutes (or longer) until tomatoes are well-roasted and garlic is lightly browned.
  6. Let cool 5-10 minutes.
  7. While tomatoes are cooling, heat olive oil in frying pan over medium-high heat. Add onion and fry, stirring regularly, until onions are almost caramelized.
  8. Add fresh herbs and cook 1-2 minutes. Pour onion into large saucepan and set aside.
  9. Return frying pan to heat and add sausage, frying until well-browned. Add to saucepan with onion-herb mixture.
  10. Pour tomatoes into food processor or blender and blend until smooth.
  11. Add to saucepan with onions and sausage. Stir to combine and heat to boiling. Lower heat and simmer gently twenty minutes.
  12. Pour over hot pasta and top with freshly grated Parmesan.

Winter Windmills and A Hearty Breakfast in Amsterdam

It was a wickedly cold morning in Amsterdam this winter as my family gathered in my brother Ryan’s toasty warm flat for breakfast.

Christmas music played jauntily as Ry and his fiancée Melissa bustled about in the kitchen brewing coffee, sauteing veggies, and beating eggs. The rest of us visited and stood in front of their enormous windows watching passersby in the streets below, endlessly entertained by the ever-changing stream of humanity.

Soon we were called to the table and happily gathered round for a hearty repast, eager to fortify ourselves for an afternoon of exploring.

 

Both Ryan and Melissa are great cooks, and they outdid themselves with a savory frittata filled with cherry tomatoes, spinach, caramelized onions, and pancetta.

I got thoroughly spoiled with Melissa’s fabulous coffee: strong and creamy with a good two inches of decadently dense foam. Swoon.

Warm, full, and adequately caffeinated, we bundled into layer after layer of woolen coziness and headed outside Amsterdam to explore a park full of beautiful windmills and charming old shops and homes.

Blizzardy Evening Christmas Market in Maastricht, Netherlands

Good morning, luvs! It was a full-blown blizzard the night we went to the Maastricht Christmas Market, yet that didn’t keep the Dutch (or us!) from enjoying the music, lights and delights of the market.

Situated in the town square, the nearby church towers provide a magnificent backdrop for Christmas trees and brightly lit stalls filled with gifts and local food specialties.

Heavily bundled children can ride the carousel and Santa’s reindeer before choosing their favorite treats at the enticing candy cart across the way.

There’s something about old-fashioned candies that draw me in every time. Especially those long, swirled candy sticks in odd flavors like horehound. They make me smile.

Now I must hustle and finish getting ready! It’s another snowy day in Germany and we’re heading to Ulm to visit the Medieval Christmas Market and dig into some amazing Ethiopian food.

Winter Morning Ramble in Maastricht, Netherlands

The day of Christmas Eve we were cozy and warm in a tall, narrow house in Maastricht, Netherlands, watching in amazement as snow continued to fall. It hadn’t stopped since our arrival the day before!

I got to stay in the attic room, reached by two steep winding staircases. I had one crooked window placed in the roof at a jaunty angle, through which I could watch the snow fall. I have a great fondness for attic rooms. They seem special somehow, tinier than all the other rooms, almost like a treehouse. I always want to stay there for hours, like Jo from Little Women, wearing a quirky hat and writing marvelous stories by candlelight until the wee hours of the morning.

After packing up our belongings we donned caps and scarves, wool socks and boots, and as many layers as we could fit under our coats, and went for a morning wander through Maastricht in search of breakfast.

The town square is a beautiful spot, especially in the winter. Curving streets and gabled buildings are trimmed with evergreen boughs and bright red bows, and at night it is alight with the warmth and bustle of the Christmas market. We’d gone the night before but the snow was falling so thick and fast pictures were nigh impossible to capture! I’ll try to remember to post a few for you anyways. 🙂

I loved wandering through Maastricht, heading down random streets and narrow alleys, discovering warm bakeries laden with freshly-baked rolls and loaves, shops with handmade wares and fabulous boots, and restaurants that serve piping hot coffee and big slabs of schnitzel cooked to perfection.

I’ve never experienced such extreme cold and snow in Europe since I spent a frightfully cold spring in Russia back in 1993. If I were at home in this weather I’d be staying inside, enjoying the show from my warm apartment. But here it seems perfectly sensible to head out in a blizzard, walking for hours through nearly deserted streets, popping into cafes to warm up over steaming cups of kaffee für kir (the delicious Dutch version of a latte).

Now I must dash! Time for coffee and breakfast with my family before we brave the snowy streets of Stuttgart, Germany for a day of shopping and exploring.

Good morning, luvs! I’m writing to you from VERY snowy Amsterdam. It’s wicked cold and absolutely gorgeous. We’ve had such fun getting bundled up and going for walks along the canals, through the parks, then dashing home to warm up with hot food, cozy afghans and great movies with popcorn.
